Wilde Fermentation
Make your own sauerkraut, piccalilli and curtido.
In many cultures, fruit and vegetables have been fermented since time immemorial. Fermented vegetables are rich in vitamins, lactic acid and probiotic microorganisms, and offer a surprising array of flavours. In this workshop, you will learn how fermentation creates lactic acid vegetables.
What is fermentation and why is it so good for us? Participants will experiment with carrots, white cabbage, leeks and other vegetables, which will be turned into sauerkraut, leek sauerkraut, curtido or piccalilli, for example. Various spices also open up exciting taste experiences.
